Ingredients

ü 1 cup DESLY light soy sauce

ü 1 1/2 cup coconut sugar or brown sugar

ü 1 tbs molasses

ü Half teaspoon fresh ginger, peeled and quartered

ü 3 whole star anise

ü 3 whole cloves

ü 4 cloves garlic, peeled and halved


Direction

· Take a small saucepan and add all ingredients to it and start boiling.   

· Minimize the heat to medium or low and simmer uncovered, stirring constantly, until the sugar’s content is dissolved and the sauce starts to thicken, 12-14 minutes.  

· (Note:  The soya sauce will continue to thicken because it cools thus be ready and avoid over-cooking it.  However, you can have a view of its thickness by keeping the sauce in the freezer a couple of times and then adding a little amount of sauce onto it to observe how thick it is when the sauce starts cooling.)

· After turning off the burner, cover and let cool all the spices, garlic, or ginger content still in it thus they can give their flavors.

· After cooling, separate the pieces and discard them, pour the soy sauce into a jar that is covered or airtight, and store in the fridge.  

· You can store it for weeks and use it whenever you want!
